Abstract The fat obtained from a Dutch Guiana sample of P. aquatica seeds contained a high proportion (∼6o%) of palmitic acid and ∼25% of acids of the sterculic acid type which may contain hydroxyl groups. The increase in viscosity which occurs when the fat is heated to 250° is attributed to the presence of these acids.
