Abstract 【Objective】In this paper,microwave-assisted extraction process of Jiashi melon seed oil was studied and the components of the Jiashi melon seed oil were analyzed.The results obtained from the experiments provide reference data to the exploitation of Xinjiang Jiashi melon seed resources.【Method】The Jiashi melon seed oil was extracted by microwave-assisted extraction,and the optimal conditions for extracting oil from Jiashi melon seed were selected by using orthogonal test.And fatty acids of the Jiashi melon seed oil were analyzed by gas chromatography-mass spectrometry.【Result】The microwave assisted-extraction rate of Jiashi melon seed oil was 46.13% under the optimized conditions.The main fatty acids were palmitic acid,linoleic acid,oleic acid and stearic acid.The total unsaturated fatty acids account for 80.85% of the fatty acids in the Jiashi melon seed oil,and 62.56% of the unsaturated fatty acids are linoleic acid.【Conclusion】Compared with traditional Soxhlet extraction method,the microwave-assisted extraction of Jiashi melon seed oil was more efficient;The Jiashi melon seed oil was richer in unsaturated fatty acids than other common edible oil.Thus,Jiashi melon seed have the great potential to be exploited as one of the most important medical and edible dual purpose plant resources.
